The 'best' pineapple zucchini bread
Pineapple zucchini bread3 eggs
1 cup salad oil
2 cups sugar
2 teaspoons vanilla
2 cups coarsely shredded zucchini
1 can (about 8.25 ounces) crushed pineapple, drained
3 cups unsifted flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder
2 teaspoons cinnamon
1 cup finely chopped walnuts
1 cup raisins, brown or golden
In a large mixing bowl, beat eggs; add oil, sugar and vanilla. Beat until light and foamy. Stir in zucchini and pineapple. My tweaked zucchini bread recipe
I really was hungry for my family's zucchini bread recipe so yesterday & tweaked the recipe & made a batch & it turned out almost tasting exactly as it's supposed to. Good enough that even a non-low carber will like it (my daughter loved it). Before eating a nice hefty slice, my bg was 115. An hour after it was 122, but at 2 hours later it was on its way back down at 118 so I call it a success! I'll take a spike of 7 to enjoy a home made baked treat any day! This morning my fasting reading was its normal 98. Anyway, here's my take on it.
